speckkuchen"Speckkuchen" is traditional northern Hessen specialty.
Serve it with a green salad and a glass of good german beer!


  • 1 pound of rye bread dough
  • 1 pound leek
  • 1/2 pound of Bacon
  • 1 Tablespoon oil
  • Salt, Pepper and Curry
  • 2 eggs
  • 1 pint Sour Cream

Preheat the oven to 375 degrees Fahrenheit.
Brown the bacon with the oil if necessary. Add the leek and saute 10 minutes or until tender.

Season with Salt, Pepper and Curry.

In the mean time, Roll out the bread dough til it is about 1/2 inch thick. Place it in a round cake form leaving the edges a little higher. Using a fork, pierce the dough to avoid it rising unevenly while baking.

Spread the leek/bacon mix evenly over the dough Mix the egg and sour cream and pour it over the mixture. Bake for 45 minutes.
